I recommend trying the coconut milk at King of Coconut in Mong Kok when in Hong Kong. They prepare it fresh, which means that the stand is sometimes tremendously busy. But it is always well worth the wait!

The value for money at Island Pacific Hotel is good. The rooms are not extremely large, but it has a swimming pool and a small gym. In about 10 minutes you can reach by walking the Sheung Wan station (Shun Tak Centre). The tram stop is just outside the hotel. There are also half-hourly shuttle services to the Airport Express.
